Broccoli Chowder

This delicious soup is loaded with cheese, potatoes, cream, and yummy broccoli.

The Ingredient:

Broccoli to be cut into small pieces
Diced Potatoes
Sliced of Carrots
Vegetable broth or Chicken broth
Milk and cream
Some Butter and a touch of Flour
Lots of Cheddar cheese
Add Dijon mustard to the flavor
Don't forget the Onions and Garlic
Finally, add Salt and pepper to the mix

  1. Put Broccoli, Diced Potatoes, Vegetable broth or Chicken broth, Sliced of Carrots into a pot, bring it to a boil and stir, then reduce the heat to a simmer and cover the pot. 

  2. In a large saucepan or Dutch oven, cook onions and garlic until softened, usually for about 5-6 minutes, add to the mix.

  3. While the vegetables are cooking, make a separate creamy mixture by whisking flour into melted butter until smooth. Gradually stir in milk until the mixture thickens, then add it to the vegetable mixture.

  4. Add cheese:  Stir in the shredded cheese (Cheddar cheese more specifically, or try, Mild cheddar, Colby, Monterey jack, mozzarella, Swiss and queso blanco) and heat the chowder until the cheese is melted and the chowder is heated through.

  5. Season the chowder with salt and pepper, also some Dijon mustard for coloring, have it sit on the stove to keep it warm for serving.

  6. Served while it's warm, Garnish the Broccoli Chowder with extra cheese or grated carrot.

  7. Consider to add The sides such as: crusty bread, bread sticks, corn-bread. Other hearty veggies: green salad, oven-toasted vegetables, and potato salad.
