Rice Noodle Soup

  • Rice Noodles are usually cooked in a broth (chicken broth, pork bone broth, or beef bone broth); sometimes it is served fried (fried rice noodles).  
     
  • There are the skinny thin noodles (more chewy than others), the thick noodles (it looks flat), the rounded long noodles (best served while it's warm).
     
  • These noodles are quite nourishing; often served with mushrooms, vegetables, and sour cabbages, occasionally with eggs, flavored meat and seafood.
     
  • When the weather gets cold, you can ask to add spicy chili, dried daikon and preserved radish.  It adds a lot of flavor to the noodle soup.
     
  • Try to add more broth in the soup, and have it warm or hot.
     
  • It's a good meal or between the meals if you have appetite.
