These are fish-balls on a stick.  They are deep-fried/cooked/soaked in a spicy-salty broth.  It is a well-known street food all-across Asia, especially popular in the south region where they are lots more street vendors.

As for variety, there are fried-tofu sticks, bean-curd sticks, curry squid ball sticks, sausage sticks, shrimp sticks, roll/spam on a stick.

If you get your sticks in a cup or a bowl, you can ask to add some cooked/boiled veggie and mushrooms, also add your choice of cooked/boiled noodles to go with it.  It can be a real meal, and quite tasty!
